Controller Set-up:
The game is sometimes known not to show the correct button prompts in the game or sometimes the brake action is missing from the game entirely, due to the Steam controller settings.

To fix this open Steam Big Picture Mode > go to Controller settings > uncheck all the controller options > exit Steam > connect your controller to your PC with a USB wire > launch the game from the Ubisoft Connect launcher
